It does show a little bit of fear I think – because it’s really a vegetarian book which wants to appeal to vegans without turning off any markets.

The proportions were all off here and I am not sure how you slice a red cabbage into cubes and then separate the leaves and lay evenly in a roasting tray without overlap or mess. Nervous but undeterred, I tried a second recipe, "Chickpea, Halloumi and Red Onion Salad with Coriander and Giant Couscous".Roasting is absolutely one of my favourite ways of cooking vegetables as there is something about the aroma and the texture of them that I just love (and even as I type this, I am thinking about my favourite soup which has roasted butternut squash, shallots, garlic and sweet potato as a base…. Each chapter begins by outlining the basic formula behind each of the different bakes and offers a customisable base recipe to follow to come up with your own flavour combos. Spend a little time prepping some ingredients, chuck them in the oven, go and do something else and dinner’s ready - the oven has taken care of the hard work. I found the Spicy Chipotle Chicken Wings recipe outrageously straightforward – just two ingredients in a tin covered in an easy chipotle mixture and shoved in the oven.

Midweek evening meals for me are all about getting something interesting on the table with the least possible amount of time and effort. Every single dish in this book has about 20+ ingredients and I don’t understand with so many ingredients how any of these dishes can be quick?What really annoys me is that this book is really a vegetarian book with the vegan-friendly recipes put at the front. So the idea behind The Roasting Tinis like manna from heaven: imaginative food requiring minimal preparation (i. because the trick of it is that you bake it with the tomato vines, which is maybe a thing that you already all know makes food taste delicious, but it was new to me, and it was SO TASTY that now i want to put tomato vines into my lasagne and my breakfast cereal and everything. There have been several iterations of this recipe throughout the Roasting Tin series, but we especially love this version with roast peppers, rosemary, and ricotta. I bought because I now have a vegan in the family, and because I made a new year's resolution to try one new recipe a week to get out of my own cooking rut, but this book has earned its keep already.

I'm very into this book on many levels, but mostly because it is such an easy, fun and cheap way to eat more vegetables. The first recipe I made (from The Quick Roasting Tin) was "Chilli Peanut Beef with Red Peppers, Sweetcorn and Spring Onion" and while the vegetables and peanut dressing were lovely, the beautiful rump steak I'd bought turned to shoe leather in the oven.

Good book for: Those who want to enjoy nutritious food made from scratch, but don’t have time to spend on preparation-heavy dishes. I love everything about them, from the gorgeous looking food to the friendly and down to earth writing, but mostly I love the concept. Forget tasteless and unimaginative vegan and vegetarian dishes, with Rukmini’s recipes you won’t miss meat or dairy, thanks to plenty of seasonal vegetables, hearty grains and flavourful dressings. We talk comfort food, family cooking memories and why Rukmini is obsessed with the concept of one-tin cooking. The combinations look sensible and everything seems easy to follow (I have seen some criticism of the author in other books for poor proof reading of recipes – this is absolutely critical in cookbooks and something that happens all the time.

I should note that many of the cheeses recommended in the book would not be eaten by many vegetarians due to the presence of rennet. The butternut and bulgur wheat was tender, aubergine deliciously soft and the halloumi still delightfully squeaky. But this and its sister book have done just that and for the better with less food waste, less energy and a wider range of foods getting eaten by Other Half. This could lead to some awkwardnesses if lovingly and innocently prepared by people for vegetarian friends and relatives. This brightly coloured cookbook is packed with simple one-dish recipes that require minimal preparation but deliver maximum flavour, nutrition and satisfaction.All that’s required from you is a little preparation while your oven heats up, then you chuck all the ingredients together and leave the oven to get on with cooking dinner.
