I think you would either get wrinkles because the temperature may be too high (letting steam escape from the shells and now out of the feet like it should), or because the shells didn’t have a chance to set properly. Did you leave them for at least 30 minutes to harden? I find that convectional ovens (not fan/convection) will vary quite a bit. If you found some underdone but the bottoms starting to brown, drop your oven temp 5 degrees or so and give them a minute longer. I did use a gel food coloring but it wasn’t a new tube. But I’m thinking it is more of an oven temperature issue? We want to hear from you before or after you bake macarons. Which printable macaron template did you choose for your supplies? So, I love this blog. I love this recipe. My first and second attempts at macarons were a success (aside from me not being the best at piping). Didn’t deflate enough when folding batter. You may need to mix a bit more. You actually want to deflate the batter slightly. Oh my! Soooo this type of problem is tough to identify. My recommendation would be to just try and repeat it and see what happens. Are you in a humid place? Liquid/moisture would be my first guess. If you are already weighing your ingredients (and you should be), try this:This is a fun template, when I made it, I also added a royal icing decoration to the foam part, and painted the mug with food coloring to add some details to the macaron. Don't throw any rejects away! Use them to make plenty of desserts. My eldest daughter loves these desserts so much, she was happy in the early days if there were any rejects. Now we just use pretty perfect shells. Macarons are made using fine ground almonds, whereas macaroons are coconut based. Try our macaroons recipe here. I’m writing this after another failed attempt at macarons. I’ve tried about 5 times, and my last two batches have come out worse than the previous ones. The last one I attributed to a very rainy and humid day, but I don’t know what the problem was today. Is there something I should be doing differently for the high altitude I live in? The roundness issues, I’m not too sure about. I don’t think that would happen unless you are piping a bit lop-sided. Be sure when you pipe, you are doing do with the piping bag point directly down. If you pipe at an angle, you risk putting more on one side than another. Straight up and down. The more you practice piping these, the more uniform they should be. Good point. You can use either, but know that the more fine your almond source is, the better your macarons will look. They can look a bit rough in texture if it isn’t fine enough. Recipe will certainly worth with either, though. Now all you need to do is fill up the mixture in a piping bag and lay 1.5-inch drops of the batter on a silicone mat. The 300 listed is conventional oven. My first guess would be that you are either 1) not cooking long enough or 2) not waiting until they are completely cooled to remove them. You can find more heavy duty baking paper (like THIS one) that will help if it is still an issue. Once you get your macarons piped, you’ll be happy to know that I encourage you to beat the daylights out of them. Hold the baking sheet a good foot or so above your table/floor/whatever flat, solid surface is nearby. Drop the pan (evenly) like Missy drops a beat. Repeat several times. Then do it once more. This ensures that all of the bubbles make their way out of the batter. If you don’t do this well, you will end up with hollow macarons. I could indeed bake macarons on silicone but the findings were interesting while making salted caramel macarons. The thing though is that if you have a really good macaron recipe and your technique is dead on, you can actually bake them without the drying step at all. It is just an insurance policy to make things a bit more consistent. I did work the batter pretty hard because after 70 folds, the viscosity still wasn’t close to where it needed to be! It did end up looking like cake batter which is why I kept working it. Good to know that was a mistake! I’ll definitely give the scale a go. I’d probably say it was improperly measured ingredients rather than the egg whites because I use my kitchen aid and it was very stiff.

The Equipment For Making The Best Macarons

I would really encourage you to start weighing everything when you bake. These scales aren’t expensive, and you can often make everything in a single bowl, cutting down on the cleanup efforts at the end. Lots of debate in the pastry world over this. My experience is that convection works great (and can bake multiple trays usually at the same time), but only if you have really nailed the meringue. It is more common to see convection used for Italian meringue macarons, I think. Good conversation, though! Thank you! There are also some specialized macaron baking mats but even those are just customized silicone mats that hold the macarons in place and keep them from expanding sideways instead of upwards.
