I had never made gingerbread men before so I thought we would have a great time together making gingerbread men. A little bicarb is added to your gingerbread dough. Not much but just enough to cause a slight reaction with the heat in the oven. This helps achieve a more even bake and texture in your biscuits, and prevent them edging from having a nice bite, to breaking your teeth! I even kept some of the gingerbread cookie dough in the fridge and tried again in a few days time but little Miss Spice still did not want little gingerbread men! Bake the biscuits for 8–10 minutes, or until they are rich brown at the sides and slightly paler in the centre. You can swap out the sugar for an alternative, like caster sugar, but you will find their colour changes, as does their level of sweetness. Personally, I think the light brown sugar is a must. Get your child to measure the sugar then add it into the flour mixture. Add the ginger and bicarbonate of soda and mix it all in.
