I had never made gingerbread men before so I thought we would have a great time together making gingerbread men. A little bicarb is added to your gingerbread dough. Not much but just enough to cause a slight reaction with the heat in the oven. This helps achieve a more even bake and texture in your biscuits, and prevent them edging from having a nice bite, to breaking your teeth! Bake the biscuits for 8–10 minutes, or until they are rich brown at the sides and slightly paler in the centre.
