Capsaicin extracted from chilies is used in pepper sprays and some tear gas formulations as a chemical irritant, for use as less-lethal weapons for control of unruly individuals or crowds. [45] Such products have considerable potential for misuse, and may cause injury or death. [45] Crop defense [ edit ] Normah MN, Chin HF, Reed BM (2013). Conservation of tropical plant species. Chili peppers, also spelled chile or chilli [3] (from Classical Nahuatl chīlli [ˈt͡ʃiːlːi] ⓘ), are varieties of the berry-fruit of plants from the genus Capsicum, which are members of the nightshade family Solanaceae, cultivated for their pungency. [4] Chili peppers are widely used in many cuisines as a spice to add "heat" to dishes. Capsaicin and related compounds known as capsaicinoids are the substances giving chili peppers their intensity when ingested or applied topically. Chili peppers exhibit a wide range of heat and flavor profiles. This diversity is the reason behind the availability of different types of paprika and chili powder, each offering its distinctive taste and heat level. [5]

There are. What you usually see in the North American market derives from moritas chilies. These are chipotles made in Chihuahua in Mexico, and they can be recognized from the dark purplish hue. In the southern areas of Mexico, there’s another version (called chile meco) which is gray in color. You typically don’t see this variety make its way north as often. What do chipotle peppers taste like? Chipotles impart a relatively mild but earthy spiciness to many dishes in Mexican cuisine. The chilis are used to make various salsas. Chipotle can be ground and combined with other spices to make a meat marinade – adobo. Chipotle is used, typically in powdered form, as an ingredient in homemade and commercial products, including some brands of barbecue sauce and hot sauce, as well as in some chili con carnes and stews. Usually, when used commercially, the product is advertised as having chipotle in it. [ citation needed] Decimal: Based on the median heat of the peppers. The jalapeno is “1,” and the other peppers are either less than one (less spicy) or above one (hotter). As you’ll see, some peppers are much, much hotter than a jalapeño. You can read the hotter pepper numbers as “X times hotter than a jalapeño”. For instance, the median heat of a habanero (at 42.86) is nearly 43 times hotter than the median heat of a jalapeño. The average consumer knows the jalapeño chili as a green, mild, fresh chili, but when you leave jalapeño on the plant for longer it goes from green to red – and this is critical for the understanding of chipotle chilies. Many fresh chilies such as poblano have a tough outer skin that does not break down on cooking. Chilies are sometimes used whole or in large slices, by roasting, or other means of blistering or charring the skin, so as not to entirely cook the flesh beneath. When cooled, the skins will usually slip off easily.

Title of world's hottest chili pepper stolen – again". The Independent. London. 25 February 2011 . Retrieved 27 February 2011. Climate, soil, and rainfall all affect how hot jalapenos will be, and the level of ripeness determines heat as well. Chili peppers are believed to have originated somewhere in Central or South America [6] [7] [8] and were first cultivated in Mexico. [9] After the Columbian Exchange, many cultivars of chili pepper spread around the world, used for both food and traditional medicine. This led to a wide variety of cultivars, including the annuum species, with its glabriusculum variety and New Mexico cultivar group, and the species of baccatum, chinense, frutescens, and pubescens. The hottest chili is neither habanero nor ghost pepper. It is currently a variety of Carolina reaper, although chile growers like one-upmanship and every few years a hotter strain is released.

Due to their unique pungency, chili peppers constitute a crucial part of many cuisines around the world, particularly in Chinese (especially in Sichuanese food), Mexican, Thai, Indian, and many other South American and East Asian cuisines.
